gluten-free, dairy-free, no sugar added
GNOCCHI I use the Delallo Gluten-Free Mini Gnocchi. This is what is available to me at my local stores. This can be made with any gnocchi but be sure to check for gluten-free as needed.
SUN DRIED TOMATOES Alternatively, you can use fresh garden cherry tomatoes and roast them in the oven yourself.
PROTEIN If you want the added protein, this pairs well with a grilled meat of your choice. Chicken and shrimp are good candidates for this.
Bacon can be incorporated into the dish for a different take on it. I cook it on the skillet and add it in at the end. Hempler’s has a “zero sugar” bacon that is very good with only basic ingredients (pork, water, sea salt, and celery powder.)
If you are able to have dairy, feta is also an option to pair with this. I used to sprinkle it over the top just before broiling.
SERVINGS Adding in another package of gnocchi will help spread this meal to serving 4. Broiling it at the end will ensure it crisps up with more on the pan.
