With three simple ingredients, it’s easy to throw together a quick dinner with elevated flavor. This maple dijon sauce over grilled salmon and rosemary potatoes, is a family favorite. It’s sweet and savory, with a fresh kick of ginger.

Notes
DIJON I use the Maille Dijon Originale. I prefer the simple ingredients and there are no added sugars.
GINGER The easiest way to grate ginger is to keep it in your freezer and pull it out when you need it. There is a freshness of flavor that you just can’t get with ground ginger. When frozen, it grates easily with a fine grater and you don’t have to peel the skin off. If you don’t have any on hand you can put in 1 teaspoon of ground ginger instead.
VARIATIONS Depending if I’m going for a glaze or more of a dipping sauce, I adjust the amount of maple syrup to taste. I like the sweetness of the maple syrup when drizzled over salmon. I prefer a little less maple syrup for more of a mustard sauce if dipping chicken or potatoes.
