Sheet Pan Gnocchi

A few years ago I started walking down the produce aisle at the grocery store, and realized I knew only a portion of them and used less than that. I set a goal to pick a new vegetable every week to make for dinner. Thus, I was introduced to broccolini. This sheet pan gnocchi has evolved over to be a simple, delicious, easy meal for a busy week night. It’s a family staple.

This can be eaten as a vegetarian main dish, or paired with a grilled meat like chicken or shrimp. Alternatively, we have grilled bacon pieces and added them in to get some extra protein. It really just depends on the day and the mood.

Sheet Pan Gnocchi

gluten-free, dairy-free, no sugar added

Ingredients

  • 1 12 oz package gluten free gnocchi
  • 1 bunch broccolini (washed, trimmed, and cut into 1/2” pieces)
  • 1/2 red onion (cut into half-moon slices)
  • 3/4 cups sun roasted tomatoes
  • 4 garlic cloves (minced)
  • 2 tablespoons Olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon kosher salt
  • 1 tablespoon thyme
  • freshly ground black pepper
  • red pepper flakes (optional)

Instructions

  1. PREHEAT Set oven to 400 degrees.
  2. PREP Cut broccolini, red onion, and garlic.
  3. COMBINE In a large bowl toss everything together and spread evenly onto your sheet pan.
  4. COOK Put in the oven for 20 minutes. Stir then place in the oven for another 3-5 minutes on broil. The goal here is to crisp the gnocchi just enough, but not burn the broccolini ends.
  5. ENJOY Take out and serve warm!

Notes

GNOCCHI I use the Delallo Gluten-Free Mini Gnocchi. This is what is available to me at my local stores. This can be made with any gnocchi but be sure to check for gluten-free as needed.

SUN DRIED TOMATOES Alternatively, you can use fresh garden cherry tomatoes and roast them in the oven yourself.

PROTEIN If you want the added protein, this pairs well with a grilled meat of your choice. Chicken and shrimp are good candidates for this.

Bacon can be incorporated into the dish for a different take on it. I cook it on the skillet and add it in at the end. Hempler’s has a “zero sugar” bacon that is very good with only basic ingredients (pork, water, sea salt, and celery powder.)

If you are able to have dairy, feta is also an option to pair with this. I used to sprinkle it over the top just before broiling.

SERVINGS Adding in another package of gnocchi will help spread this meal to serving 4. Broiling it at the end will ensure it crisps up with more on the pan.
